The short answer
Sock yarn is category 1 and wants 2.25 to 3.25mm needles, and most interchangeable sets start at 3.5mm because the join cannot be made reliably smaller. Buy fixed circulars or DPNs in 2.25 or 2.5mm. The ChiaoGoo TWIST set, starting at US 2 (2.75mm), is one of very few interchangeable sets that reaches sock territory at all.

Why your set stops where it does
An interchangeable needle has to be drilled and threaded to accept a cable. Below about 3.5mm there is not enough material left around the bore for the join to be reliable - so manufacturers stop.
That is a physical constraint rather than a market decision, which is why it applies almost across the board. ChiaoGoo reaching 2.75mm is genuinely unusual and is the main reason it is our overall set recommendation.

Three ways to knit a small circumference
Magic loop
One long circular - 32in or longer - with the cable pulled out in a loop at each side. It is the most popular modern method because it needs one needle and nothing can be dropped or lost.
It needs a genuinely flexible cable and a smooth join, or the repeated pulling becomes tiring. Full detail in best needles for magic loop.
Two circulars
Half the stitches on each of two circular needles. Less cable pulling than magic loop and no ladders. It requires owning two identical needles, which is why it is less popular than it deserves to be.
Double-pointed needles
The traditional method. Stitches divided across three or four needles with a fifth working. It is fast once learned, and it produces ladders - loose columns where the work passes between needles - until you get used to pulling the first stitch of each needle tight.
DPNs are also easy to lose, which is why they come in packs of five.
Which needle size
The standard puts category 1 super fine at 2.25 to 3.25mm. Most sock patterns land at the fine end - 2.25 or 2.5mm - because a dense fabric wears far longer than a loose one, and socks are the hardest-wearing thing most knitters make.
Patons Kroy Socks publishes a gauge of 32 stitches x 40 rows on 2.75mm, which is the label's balanced figure - going down to 2.5mm for a firmer sock is common and deliberate.
Material at sock gauge
Metal is the usual choice for socks: sock yarn is fine and slightly sticky with its nylon content, and a metal tip moves stitches along without a fight. Sharp tips also help, because sock heels involve a lot of decreases worked into small stitches.
Bamboo at 2 to 2.5mm has one clear advantage - grip, which matters on DPNs - and one clear problem: it is thin enough to snap. If you knit socks on bamboo DPNs, expect to replace them.

What size needles for socks?

Why can't I knit socks with my interchangeable set?
Because the join cannot be drilled reliably below about 3.5mm, so most sets start there. Sock yarn wants finer needles than that, so you need fixed circulars or DPNs.
What is the best needle for magic loop socks?
A 32in or longer circular with a genuinely flexible, memory-free cable and a smooth join, in 2.25 or 2.5mm. The cable quality matters more than the tips for this method.
Are DPNs or magic loop better for socks?
Magic loop uses one needle and nothing can be lost; DPNs are faster once learned but produce ladders until you get used to them. Both work, and it is genuinely a preference.
Should I use metal or bamboo needles for socks?
