The short answer
US 11 is an 8.0mm needle. It is the top of the range for most wood interchangeable sets and the bottom of what chunky knitting uses, which makes it the size where sets stop being the answer. Buy a fixed circular in bamboo if you are knitting chunky, and check any set's largest tip before you buy it for this size.

Where 8mm sits
The standard weight system puts category 5 bulky on 5.5mm to 8mm needles, and category 6 super bulky on 8mm to 12.75mm. US 11 is the join between the two, which is why it turns up in so many chunky patterns.

Sitting on a boundary means 8mm is forgiving: it works for a dense super bulky fabric or an airy bulky one, and the choice is a design decision rather than an error.
The formats thin out at this size
- Fixed circulars go well past 8mm - to 15mm in the bamboo line we list.
- Interchangeable sets mostly stop at 8mm or 10mm, because a join in a very large tip is bulky.
- Double points top out at 8mm in the steel line we list.
- Straights are made larger, and a heavy chunky fabric on two levers is hard on the wrists.
- Above 10mm you are into single fixed needles only.
What 8mm makes
- Chunky hats and cowls - an evening each.

- Oversized sweaters, where the bulk is the point.
- Chunky scarves, the fastest satisfying project in knitting.
- Not fine anything. Lace, socks and colorwork all need far smaller needles.
Chunky is harder on the hands than it looks
Large needles are heavier, the fabric is heavier, and the stitches take more force to move. Chunky is fast in rows and not effortless in the hands.
- Circulars over straights, because the weight sits in your lap.
- Bamboo over steel, because a heavy stitch slides off a slick needle.
- Shorter sessions. A chunky blanket is a lot of weight to hold for two hours.
- Watch the wrists rather than the fingers - at this size the load moves up the arm.
