Knit or Crochet a Scarf?
The one project where both crafts are genuinely easy. The differences are speed, drape and edges.

The short answer
Crochet a scarf if you want it finished sooner and do not mind a firmer fabric - crochet is faster per row and its edges do not curl. Knit one if you want the softest drape around a neck. If you are choosing which craft to learn, crochet is the kinder first scarf: one live stitch means a dropped project is not a disaster.
A scarf is the classic first project in both crafts, and for once that reputation is deserved in both. It is a rectangle, the gauge does not have to be exact, and nothing has to fit. The differences below are real but small - which is itself the useful conclusion.

The curling problem, which is a knitting problem
A knitted scarf in plain stocking stitch will curl inwards at the sides and upwards at the ends. It is not a mistake and it is not fixable by knitting more carefully - it is what stocking stitch does, because the two faces of the fabric have different tension.
- Garter stitch does not curl. Knit every row. It is the simplest fix and it makes a squashy, reversible fabric.
- Ribbing does not curl. K1 P1 or K2 P2 the whole way.
- Seed or moss stitch does not curl, and looks more interesting than garter.
- A wide garter border on stocking stitch tames it partly, not entirely.
- Blocking helps and does not cure it - a wool scarf blocked flat will curl again after a wash.

Speed, honestly
Crochet is faster for a scarf, and the reason is geometric rather than about skill: a double crochet stitch is roughly twice the height of a knit stitch, so half as many rows cover the same length.
The cost is yarn. Crochet uses more of it for the same finished area, so a crocheted scarf needs more yardage than a knitted one of the same size - which also makes it heavier and denser around the neck.
Drape
- Knitted fabric is more fluid and settles around a neck rather than standing away from it.
- Crocheted fabric is firmer, which suits a structured cowl or a chunky scarf and is less good for a fine drapey one.
- A larger hook narrows the gap. Crocheting loosely produces a drapier fabric than crocheting at the yarn's recommended gauge.
- The yarn matters more than the craft. A soft merino crocheted loosely drapes better than a stiff cotton knitted tightly.
Which is the kinder first project
Both are reasonable. Crochet has a small edge for three specific reasons:
- One live stitch. Drop a crochet project in a bag and nothing happens. A dropped knitting project sheds stitches.
- No curling. A first crocheted scarf looks like the picture; a first knitted stocking-stitch scarf looks like a tube.
- Mistakes unpick cleanly. Pull the hook out, pull the yarn, start the row again.

The upgrade that works in both
Holding a lace-weight mohair together with a worsted yarn produces a scarf with a halo, more warmth and almost no extra weight. It works identically in knitting and crochet, and it is the easiest way to make a plain scarf look considerably more expensive than it is.
